A New Generation of Chefs from HOTEL SCHOOL RIGA Trains in Legendary Roman Restaurant
In summer 2025, learners of the HOTEL SCHOOL Hotel Management College professional education programme travelled to Italy for their internship. In collaboration with the host partner, the Italian Hospitality School, they were placed in some of the finest restaurants in Rome.
One such placement is at “Don Pasquale”, the signature restaurant of the 5★ hotel MAALOT ROMA, a member of the Small Luxury Hotels of the World association, listed in the Michelin Guide and awarded Best Hotel Restaurant in Italy 2024.
Learners of the “Catering Services” programme, Vyacheslavs and Danila, are completing a 6-week qualification internship at Don Pasquale. Here they are honing their culinary skills while discovering the masterpieces of Italian cuisine—both in traditional and modern interpretations. Their internship supervisor is Chef Domenico Boschi, who combines the traditional flavours of his native Rome with bold, contemporary creativity. Using locally sourced artisan ingredients, his dishes are presented as colourful compositions—true edible works of art.
