Training Experience at Accademia Francesco Bologna
From March 9–15, 2026, HOTEL SCHOOL Hotel Management College learners took part in an intensive practical training program at Accademia Francesco Bologna in Milan — one of Italy’s most respected culinary training institutions, renowned for its expertise in artisanal pizza, baking techniques, and preserving authentic Italian culinary traditions. The academy is especially known for training world-class pizzaioli and collaborating with industry champions, making it a benchmark for excellence in pizza craftsmanship.
During the visit, learners immersed themselves in Italian culture — exploring Milan, visiting the legendary Formula 1 track, discovering picturesque lakes and nearby towns, and enjoying shared breakfasts and lunches filled with authentic Italian flavors. A true highlight was tasting exceptional dishes, including pizza crafted by a world champion.
Training sessions at the academy were hands-on, practical, and highly insightful. Learners explored the fine details behind perfect bread and pizza — from mastering baking temperatures to understanding ingredient balance, including the precise use of mozzarella. More importantly, they gained a deeper understanding of the “why” behind each technique, strengthening both their skills and professional confidence.
Beyond the kitchen, the experience was filled with memorable moments — spontaneous town adventures, unexpected bus delays that turned into stories, and even group workouts on pull-up bars with Chef Roman. Each day brought new discoveries, valuable knowledge, and meaningful connections.
This experience perfectly blended education with exploration, leaving learners not only with enhanced culinary skills but also with unforgettable memories that will stay with them for years to come.
